Trends in consumption of animal products in France: multiple challenges

Abstract

The consumption of animal products is a crucial issue for global food security. The high consumption of animal proteins in France is now at the heart of the sustainability challenges, faced with less favourable public recommendations, after having followed an increasing trend over the past decades. However, there have been profound changes behind this development, both between and within major food categories, as shown by the analysis of purchasing data over four decades. Now, in a context of saturation of protein needs, and in particular of animal origin, households have to redirect their consumption patterns. Incentives are offered through price increases simulations, the consequences of which in terms of sustainability are examined, in terms of reducing environmental emissions, nutritional quality of food and social inequalities. The combination of these three dimensions helps to inform the debate on the development of sustainable public policies.
