Abstract
The consumption of raw-frozen products represents a delicacy for the Yakut. The classical opposition between the cooked and the raw must be increased by a third term, that of raw-frozen, deeply ambivalent, neither cooked nor raw. The gustative pleasure is coupled with a deeply identical reference. This article is intended as a starting point for thinking the relationship between conservation and consumption practices, linked to raw-frozen and the affirmation of a Yakut identity. The Interviews weconducted in two regions and the capital lead us to decipher the characteristics of an ideal representation of nature that structures consumer practices as well as identifying processes. There is a gastronomic specificity linked to the naturalness of taste and products, which are themselves intimately linked to the overvalued aspect of a nature perceived as the crucible of Yakut culture.
