Abstract
The publication of the thesis of Gilles Caster in 1962, dedicated in part to pastel, marked a turning point in the history of this product. It was only after some decades that researchers would take it up again, providing a number of further specifics and some corrections to the conclusions of Gilles Caster. The most important concern the chronology, which was able to be revised thanks to documents coming from the regions of customers, whereas G. Caster had only worked with Toulousain documents. These studies show the diverse stages of the marketing of pastel had begun earlier than Caster thought. Moreover, these studies provide information on aspects that he had not considered, such as the accounting of companies or a social study of pastel merchants.
