Abstract

This research centers on the needs of constructing an inventory of Buenos Aires food shops, with the end to be integrated to Molecular Gastronomy. This essay-review focuses on the gastronomic tradition recently-happened in Argentina during the passing of recent years. It proposes on the limitations of a bad alimentation which is produced by the lack of interests in Gastronomic issues.
