Record interactions in the restaurant: strengths and constraints of an experimental framework

Abstract

Within a research program dealing with Conversation Analysis (Sacks, 1992) about linguistic and multimodal dimensions of the interactions between service staff and customers during a meal at the restaurant, we elaborated a part of our corpus in an experimental restaurant by audio and video recording. In this article, we will expose how this restaurant was used for the constitution of our corpus to get authentic data recorded in their natural context of production.Thanks to the fine analysis of two extracts, we will show that the technical device in this structure cannot be used without having led beforehand a methodological thinking and a work of field observation. In fact, the choices of arrangement of microphones, orientation of cameras and mixing of the audio and video sources, have a strong impact on the data collection, and consequently, on the analyses. This reflexive approach will then allow us to underline the limits of this recording system which led us to contain our question and to revise our system of captation in order to produce overall exploitable data for the led research.
