Abstract

[EN] Honey have a multiple volatile compounds that are typical markers of their geographical zone and botanical origin on which bees recollect nectar and honeydews. Thus, this volatile compounds confer to honey specific organoleptic character, especially in unifloral honey. Unifloral honey are too appreciate by consumers so, for this reason, honey assessment is important for this industrial sector. Moreover, volatile compounds can be an specific ¿Fingerprint¿ of honey, its analysis is a useful tool in order to characterize its botanical and geographical origin. Overall, the main objective of this work is to emphasise the volatile markers of main honeys (acacia, chestnut, citrus, dandelion, eucalyptus, heather, rosemary, sunflower and thyme) in principal European countries (Spain, Portugal, France, Italy, Greece, Romania and Poland). In this review it has been considered the information in relation to solid- phase microextraction (SH-SPME) in dynamic headspace coupled to gases chromatography and mass spectrophotometry (GS/MS) because of its sensitivity. It should be remarked some abundant components in honeys: acetic acid (acacia honey); 2- aminophenone (chestnut honey); lilac aldehydes, lilac alcohols and methyl anthranilate (citrus honey); nitrile components (dandelion honey);acetoaldehyde and octane (eucalyptus honey); benzaldehyde (heather honey); hidroxypentanone (rosemary honey); 3-methyl-2- butanol (Sunflower honey); finally, phenilacetoaldehyde (thyme honey). The information was searched in different scientific basis and it was organized to conclude about specific volatile markers. The result can be applied in future laboratory studies to help scientist in identification of botanical and geographical origin of honey. TFGM
