Kitchen in the Campesina de ViCos de los Andes Peruvian Community: between local ‘tradition’ and global globalisation




Since prehispanic times, farmers in the Community of ViCos in Peruvian Andes have developed practices and eating habits with which they have been identified. Throughout history, local cooking has been the result of the incorporation and abandonment of inputs, techniques, utensils, knowledge and behaviour, but in recent decades the development of a new global system, known as globalisation, is causing new impacts on food practices. As ViCos is a rural and agricultural population, directly linked to the cycles of nature and local beliefs, our interest is to investigate how the local cuisine of this place can be influenced in the present, by the trends of globalisation and by the ‘traditions’ inherited from its ancestors.
