Gastronomy and tourism: A study at the Jaguão/BR and Rio Branco/UY border

Abstract

Gastronomy is an attractive potential in tourism as it can generate unique and memorable experiences. It is part of the tourist experience and does not dissociate itself from it, and if it works as an intangible cultural patrimony, it can distinguish a region, highlighting its peculiarities and strengthening its authenticity. The patrimony Gastronômico, in order to strengthen its differentials to attract visitors, can be highlighted by the development of tourist roadmaps, events, where gastronomy is the focus of their planning. The aim of this work is to analyse gastronomy as part of the process of cultural interaction at the border between Brazil and Uruguay, through the cities of Jaguará (BR) and Rio Branco (UY), and aims to carry out a diagnosis of the Brazilian and Uruguayan Gastronômico and tourist potential in order to develop proposals to promote the development of the Gastronômico tourism segment, which is cultural in the municipality of Jaguará. Bibliographical and documentary research and field research were carried out for diagnosis by means of informal conversations with local residents, and analysis of establishments’ cardopes.
