Evaluation enzymatic in post harvest of mana cubiu treated with gamma radiation = Post-harvest enzyme assessment of cubiu mana treated with gamma radiation

Abstract

The objective of this study was to assess the effects of gamma radiation on fruit quality and preservation of mana cubiu through its enzymatic characteristics, with 20 days of storage and 5 taken every 4 days. The fruits selected were subjective to different doses of gamma radiation Co60 (0.0; 0.2; 0.4; 0.6 and 0.8 kGy) packaged in trays of expanded pollock covered with stretchable PVC film associated with Refrigerated at 10 ± 3 °C and 85 ± 5 % UR and valued in six periods (0, 4, 8, 12, 16 and 20 days). The variables valued were: enzymatic activity of Pectin (PME), polygalacturonase (PG), polyphenoloxydase (PPO) and peroxidase (POD). For PG there was no interaction between dose and storage on the day 16 the high value to 640.10 EU min-1 g-1 and 0.8 kGy dose shut the lower with 376.37 10 EU min-1 g-1. SME now get in 16 days and 0.8 kGy dose the high values of the experiment, to 290.74 EU min-1 g-1. In POF, the day 16 presented the value of 0.26 min-1 g-1 of dry mass-1. In 20 days the fruits of all things provided the high values of POD during the experiment. The results found that different doses of gamma radiation does not interfere with the activity of the enzyme determined in this experiment. = The effect of different doses of gamma radiation and storage times on the enzyme activity of cubic mana fruits has been assessed by this work. The selected fruits were subjected to different doses of gamma radiation with Co60 (0,0, 0,2, 0,4, 0,6 and 0,8 kGy), packaged in expanded polystyrene trays, covered by stretchable PVC film and stored in cold storage at 10 ± 3 °C and 85 ± 5 % UR and evaluated in six periods (0, 4, 8, 12, 16 and 20 days). The variables assessed were: enzyme activity pectinametilesterase (SME), polygalacturonase (PG), polyphenoloxydase (PFO) and peroxidase (POD). For PG there was no interaction between dose and storage, on day 16 the value was higher with 640,10 EU min-1 g-1 fresh tissue and the 0,8 kGy dose showed the lowest value with 376,37 10 EU min-1 g-1 fresh tissue. Already SMEs on day 16 and at dose 0,8 kGy obtained the highest values of the experiment, with 290,74 10 EU min-1 g-1 fresh tissue. In PFO, day 16 had a value of 0,26 MI-1 g-1 of freshness -1. On day 20 the fruits of all treatments provided the highest POD values throughout the experiment. The results showed that the different doses of gamma radiation did not interfere with the activity of the enzymes under study.
